Ingredients:

  • 1 aubergine, sliced lengthways into about 4 slices
  • Olive oil, for rubbing For the blistered tomatoes:
  • 200 g cherry tomatoes, sliced in half
  • 1 tsp balsamic glaze
  • 1/2 tsp smoked paprika
  • Splash of olive oil
  • Pinch of sea salt For the dressing:
  • Juice of 1/2 lemon
  • 1 clove garlic
  • Salt and pepper, to taste
  • Big handful of basil For the smashed avocado:
  • 1 avocado
  • Salt and pepper, to taste
  • Lemon juice Optional toppings:
  • Chili flakes
  • Sea salt
  • Extra virgin olive oil
  • Pomegranate seeds
  • Toasted pine nuts
  • Excellent bread, olives, and dips

Directions:

  1. Heat your griddle pan over high heat. Rub olive oil on both sides of the aubergine slices.
  2. Grill the aubergine slices on the hot griddle pan, turning occasionally, until nicely charred on both sides and cooked through.
  3. To make the blistered tomatoes, heat a large frying pan over medium heat. Add a splash of olive oil.
  4. In a bowl, mix balsamic glaze, smoked paprika, and olive oil. Add cherry tomatoes to the bowl and toss until coated.
  5. Place the cherry tomatoes, cut side down, in the frying pan. Fry for 2-3 minutes on low to medium heat, then flip and fry for another minute. Remove from heat and season with sea salt.
  6. To make the dressing, combine lemon juice, garlic, salt, pepper, and basil in a mini chopper or pestle and mortar. Blitz until you get a green sauce.
  7. For the smashed avocado, scoop the flesh of the avocado into a bowl. Mash with a fork and season with salt, pepper, and lemon juice to taste.
