- 400-450 grams (14-16 ounces) smoked sausage, sliced into medallions
- 2 tablespoons (28 grams) butter
- 1 medium onion, thinly sliced
- 3 garlic cloves, minced or pressed
- Salt to taste
- 3/4 teaspoon freshly cracked black pepper
- 1 1/2 teaspoons paprika
- 1.5 to 2 pounds (680-910 grams) medium-size red skin potatoes, peeled and sliced into 1/2 inch (1.3 cm) thick circles (about 1.25 kg)
- 360 ml (1 1/2 cups) chicken stock
- 1/3 cup (8 grams) parsley, chopped
Directions
- Prepare the Sausage: Heat the olive oil in a large deep skillet over medium heat. Once hot, add the sliced smoked sausage and brown for a few minutes until deep brown in color. Remove the sausage from the pan and set aside.
- Caramelize the Onions: In the same pan, add the butter and let it melt. Add the sliced onions and caramelize them in the butter and sausage drippings for about 5-7 minutes. Add the minced garlic, a couple of pinches of salt, freshly cracked black pepper, and paprika. Stir to combine and sauté for an additional 2 minutes.
- Cook the Potatoes: Add the sliced potatoes, chicken stock, and chopped parsley to the pan. Stir to combine. Cover the pan with a lid and simmer on medium-low heat for about 15 minutes. Uncover and let the potatoes simmer for an additional 10 minutes, or until they are tender and the sauce has thickened slightly, stirring occasionally.
- Combine and Serve: Add the browned smoked sausage back into the pan. Season with additional salt and pepper if needed. Serve the goulash hot and enjoy!
