Ingredients:

Sauce:

  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp white wine
  • 2 tbsp seasoned rice wine vinegar
  • 2 tsp minced garlic
  • 2 tsp finely grated ginger
  • 1 tsp brown sugar
  • 3 tbsp cornstarch
  • 1/4 cup water

Chicken & Green Beans:

  • 2 lbs boneless, skinless chicken breast, chunked
  • 1/3 cup cornstarch
  • 5 tbsp olive oil, divided
  • 1 large white onion, roughly chopped
  • 1 lb fresh green beans, washed & trimmed

Instructions:

To Make The Sauce:

  1. In a medium-sized skillet, whisk together all sauce ingredients except cornstarch and water until combined.
  2. Bring the sauce to a simmer, whisking occasionally, and let it cook for about 5 minutes.
  3. Combine cornstarch and water, stirring until mixed, and gradually add the slurry to the sauce until it thickens to coat the back of a spoon.
  4. Remove the skillet from heat and set the sauce aside.

To Prepare the Meal:

  1. Add chicken to a large mixing bowl, sprinkle cornstarch over it, and toss to coat evenly.
  2. Heat 3 tablespoons of olive oil in a large wok over medium heat. Add chicken, cooking for 5 minutes per side or until golden brown and cooked through. Transfer chicken to a plate and cover with foil to keep warm.
  3. Add the remaining two tablespoons of oil to the wok. Add green beans, sautéing for 2 minutes, then stir in the onions, cooking for an additional 5 minutes until just tender. Avoid overcooking.
