Ingredients:

  • 1 sheet frozen puff pastry, thawed
  • 450 grams (16 ounces) cream cheese, at room temperature
  • 150 grams (3/4 cup) granulated sugar
  • 3 large eggs, at room temperature
  • 180 ml (3/4 cup) heavy cream
  • 5 ml (1 teaspoon) vanilla extract
  • 2.5 ml (1/2 teaspoon) kosher salt
  • 3 tablespoons all-purpose flour
  • 280 grams (2 cups) fresh blueberries
  • Granulated sugar and confectioner’s sugar, for dusting (optional)

Directions:

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Grease a 23-centimeter (9-inch) springform pan and line the bottom with parchment paper.
  2. Roll out the puff pastry on a clean surface to 6-millimeter (1/4-inch) thickness. Press the pastry into the prepared pan, ensuring it covers the bottom and sides. Refrigerate while preparing the batter.
  3. In a medium mixing bowl, beat together the cream cheese and granulated sugar until smooth and creamy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl.
  4. Reduce the mixer speed to medium-low. Add the heavy cream, vanilla extract, and kosher salt, and beat until combined, about 30 seconds.
  5. Sift the flour into the batter and beat again until combined, about 30 seconds.
  6. Pour the batter into the prepared pastry-lined pan. Sprinkle the fresh blueberries evenly over the batter, allowing some to sink into the mixture. Gently fold the corners of the pastry over the berries.
  7. Sprinkle 1-2 tablespoons of granulated sugar over the top of the cheesecake.
  8. Bake for 55-65 minutes, until deeply golden brown on top and still slightly jiggly in the center.
  9. Let the cheesecake cool in the pan for 5 minutes, then carefully remove it from the pan and let it cool completely on a wire rack.
  10. Dust with confectioner’s sugar before serving, if desired. Slice into wedges and enjoy at room temperature or chilled.

Notes:

  • Ensure that all ingredients are at room temperature for smooth mixing and even baking.
  • For a decorative touch, dust the cheesecake with confectioner’s sugar just before serving.
  • Leftovers can be stored in the refrigerator for up to 3 days.
