  • Italian seasoning (1/4 teaspoon)
  • Refrigerated cheese tortellini (2 generous cups)
  • Heavy/whipping cream (1 cup)
  • Fresh baby spinach (2 cups packed), optional
  • Salt & pepper (to taste)

Directions:

  1. In a large soup pot, sauté Italian sausage over medium-high heat for 7-10 minutes until browned. Set aside on a paper towel-lined plate, leaving a tablespoon of fat in the pot.
  2. Add chopped onion and celery to the pot, cooking for 4-5 minutes.
  3. Stir in flour and garlic, cooking for an additional minute.
  4. Slowly add chicken broth, stirring until the flour dissolves. Add canned tomatoes, Italian seasoning, and return sausage to the pot. Bring to a gentle boil.
