Ingredients:
- Cooking spray, for pan
- 20 Oreo cookies
- 113 g (1/4 lb) unsalted butter, melted
- Pinch of kosher salt
- 454 g (16 oz) cream cheese, softened
- 90 g (3/4 cup) powdered sugar
- 360 ml (1 1/2 cups) cold heavy cream
- 180 g (1 cup) chocolate chips, melted and cooled
- 180 g (3/4 cup) smooth peanut butter
- 270 g (1 1/2 cups) semisweet chocolate chips
- 360 ml (1 1/2 cups) heavy cream
- 120 g (1/2 cup) peanut butter, melted
- 340 g (2 cups) chopped Reese’s peanut butter cups
Directions:
Step 1:
- Grease an 8″ springform pan with cooking spray and line the bottom with parchment paper. Prepare the crust by pulsing Oreos into fine crumbs in a food processor. Combine with melted butter and salt, then press into the prepared pan. Refrigerate while making the filling.
Step 2:
- In a large bowl, beat cream cheese until light and fluffy. Add powdered sugar and beat until combined. Gradually add heavy cream and beat on high speed until stiff peaks form.
Step 3:
- Divide the cream cheese mixture into two bowls. Fold melted chocolate chips into one bowl and peanut butter into the other. Dollop scoops of each mixture into the prepared pan, alternating between chocolate and peanut butter. Swirl with a butter knife and refrigerate until firm for at least 5 hours or overnight.
Step 4:
- Prepare the ganache by placing chocolate chips in a large bowl. Heat heavy cream in a saucepan over medium heat until simmering. Remove from heat and pour over chocolate chips. Let sit for 5 minutes, then whisk until smooth.
Step 5:
- Pour the ganache over the chilled pie until completely covered. Drizzle melted peanut butter in thick stripes over the ganache.
Step 6:
- While the ganache and peanut butter are still warm, press chopped Reese’s peanut butter cups into the sides of the pie. Refrigerate for 1 hour before slicing and serving.
Notes:
- For a twist, try using different flavored Oreos for the crust, such as mint or peanut butter.
- Ensure the cream cheese is softened to room temperature for smooth blending.
- To easily release the pie from the springform pan, run a knife around the edges before unlatching the pan.
- Store any leftovers in the refrigerator for up to 3 days for optimal freshness.
