Ingredients:

  • 100g (3.5 oz) melted butter
  • 10 sheets filo pastry
  • 1 can (395g/14 oz) sweetened condensed milk
  • 250ml (1 cup) milk
  • 2 eggs
  • 1 tsp vanilla extract
  • Icing sugar, for dusting

Directions:

  1. Preheat your oven to 180°C (356°F) or 160°C (320°F) for fan-forced. Brush a 4.5cm-deep, 1.5L (6 cup) baking dish with a small amount of melted butter.
  2. Place one sheet of filo pastry on a clean work surface. Keep the remaining sheets covered with a dry tea towel and then a damp tea towel. Brush the pastry sheet with melted butter. From one short end, gently pull and scrunch the pastry to form an accordion-like strip about 2cm wide. Arrange it around the edge of the prepared baking dish. Repeat with the remaining pastry sheets, working towards the center and scrunching slightly to fit as needed until the base of the dish is covered. Place the dish on a baking tray and bake for 20 minutes or until the pastry is golden and crisp. Remove from the oven.
  3. In a jug, whisk together the sweetened condensed milk, milk, eggs, and vanilla extract until well combined. Carefully pour the mixture over the pastry base. Return the dish to the oven and bake for an additional 20 minutes or until the custard is set. Allow it to cool slightly for 10 minutes before serving warm, dusted with icing sugar.
