  • 2 tbsp plain bread crumbs

  • 1 package puff pastry (1 lb.), rolled out to approximately 10×14 inches
  • 1 egg (for egg wash)

Measurements:

  • Salmon fillets: 4 x 200g / 7 oz
  • Puff pastry: 1 lb = 453.592g

Directions:

  1. In a pan over medium heat, sauté butter, shallots, and garlic until shallots are translucent.
  2. Increase heat, add white wine, cook for 5 minutes, then add cream cheese and sauté for 1 minute.
  3. Add spinach, bread crumbs, and Parmesan; sauté until spinach softens.
  4. Roll out puff pastry sheets, cut in half, creating 4 pieces (approximately 10×14 inches each).
  5. Season salmon, place each fillet in the center of a pastry sheet, leaving a 2-inch border.
  6. Divide the spinach mixture evenly among the fillets, brush pastry edges with egg wash.
  7. Fold pastry over, creating a seal; brush with more egg wash.
