Ingredients:

For the Burrito Casserole:

  • 1 pound (about 454 grams) ground beef
  • 1 small onion, chopped
  • 1 pack taco seasoning
  • 1 can refried beans
  • 1 can cream of mushroom soup, undiluted
  • 1/2 cup (120 ml) sour cream
  • 1 pack large flour tortillas
  • 2 1/2 cups (about 283 grams) shredded Mexican blend cheese

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a large skillet, cook the ground beef and onion until the beef is no longer pink; drain.
  3. Add the taco seasoning and refried beans; heat through.
  4. In a separate bowl, blend the mushroom soup with sour cream. Spread half of the soup mixture in the bottom of a baking dish.
  5. Layer 3 flour tortillas on top of the soup mixture, cutting or tearing them as needed to overlap.
  6. Spread a layer of the ground beef mixture and top with about a cup of cheese.
  7. Repeat the layers and top with the remaining cheese.
  8. Bake for about 20 minutes until the cheese is nicely melted. Enjoy the flavor-packed fiesta!

Notes: Feel free to customize with your favorite burrito toppings, such as diced tomatoes, sliced olives, or a dollop of guacamole. For a vegetarian version, substitute the ground beef with plant-based crumbles. This casserole reheats well, making it an excellent option for leftovers. Happy feasting!
