Ingredients:
For the Subs:
- 450g (1 lb) ground beef
- 35g (1/3 cup) bread crumbs
- 15g (1/4 cup) chopped parsley
- 25g (1/4 cup) grated Parmesan, plus more for garnish
- 1 large egg
- 2 garlic cloves, minced
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- 2 Tbsp olive oil, divided
- 425g (15-oz) jar marinara sauce
- 4 bell peppers, cored and halved
- 4 slices mozzarella cheese
Directions:
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, bread crumbs, parsley, Parmesan, egg, garlic, salt, and red pepper flakes. Mix until just combined, then form the mixture into 16 meatballs.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until they are seared on all sides, about 10 minutes. Pour the marinara sauce into the skillet, toss to combine, and cover with a lid. Simmer until the meatballs are fully cooked, about 10 more minutes.
- Arrange the bell pepper halves cut side up on a large rimmed baking sheet and drizzle with the remaining olive oil. Place a slice of mozzarella on each of 4 bell pepper halves. Bake until the cheese is melted and the bell peppers are just warmed through.
- Place the meatballs on top of the bell pepper halves with the melted cheese and sprinkle with additional Parmesan, if desired. Top with the remaining bell pepper halves and serve immediately.
Notes:
- Substitutions: Feel free to use ground turkey or chicken instead of beef for a lighter option. You can also use gluten-free bread crumbs to make this dish gluten-free.
- Cooking Tips: To ensure even cooking, make sure the meatballs are of uniform size. If you prefer a spicier kick, add more red pepper flakes.
- Nutritional Information: These bell pepper meatball subs are a great source of protein and vitamins A and C, making them a healthy choice for any meal.
