Ingredients:

  • 2 sheets of puff pastry (approximately 400g total)
  • 2 tablespoons honey
  • 100 grams blue cheese, crumbled
  • 100 grams Parmesan cheese, grated
  • 50 grams walnuts, chopped
  • 6-8 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt and cracked pepper, to taste

Directions:

  1. Preheat your oven to 180°C (350°F). Note: Adjust the temperature to 200°C (390°F) if using an electric non-fan forced oven.
  2. Drizzle 1 tablespoon of honey evenly over each sheet of puff pastry.
  3. Divide the chopped walnuts, crumbled blue cheese, and grated Parmesan cheese between the two sheets of puff pastry. Sprinkle fresh thyme leaves over the cheese and walnut mixture. Season with sea salt and cracked pepper to taste.
  4. Roll up each sheet of pastry tightly, then cut them in half lengthways. Carefully twist each length of pastry and shape them into round coil shapes on a sheet of baking paper.
  5. Brush the pastry coils with milk and bake in the preheated oven for about 25-30 minutes or until the pastry is puffed, golden, and cooked through.
  6. Remove the puff pastry twirls from the oven and scatter extra thyme leaves on top. Serve warm and enjoy the delightful flavors!

Notes:

  • Feel free to customize the fillings by adding your favorite herbs, nuts, or cheeses for a unique twist.
  • Ensure the pastry coils are securely twisted to prevent the fillings from spilling out during baking.
  • Leftovers can be stored in an airtight container in the refrigerator and reheated in the oven for a crispy texture.
