Ingredients:

  • 113 grams (1 cup) walnuts, divided use
  • 180 grams (2 cups) old-fashioned rolled oats
  • 5 milliliters (1 teaspoon) baking powder
  • 5 milliliters (1 teaspoon) cinnamon, plus extra for garnish
  • 1.25 milliliters (¼ teaspoon) kosher salt
  • 295 milliliters (1 ¼ cups) milk, any type (such as 2%)
  • 120 grams (½ cup) plain low-fat Greek yogurt
  • 1 large egg
  • 60 milliliters (¼ cup) maple syrup or other sweetener of your choice
  • 30 milliliters (2 tablespoons) melted coconut oil or unsalted butter
  • 5 milliliters (1 teaspoon) vanilla extract
  • 225 grams (1 ½ cups) blueberries, divided use
  • 180 grams (1 ½ cups) finely chopped, peeled apple, divided use

Directions:

  1. Preheat the oven to 325°F (160°C).
  2. Spray an 8 x 8-inch baking dish with cooking spray.
  3. Finely chop ½ cup walnuts and place them in a bowl along with the oats, baking powder, cinnamon, and salt.
  4. In another bowl, whisk together the milk, yogurt, egg, maple syrup, coconut oil, and vanilla extract.
  5. Arrange 1 cup blueberries and 1 cup chopped apple in the bottom of the prepared baking dish.
  6. Scatter the oat mixture evenly on top of the fruit.
  7. Pour the milk mixture over the oats and press to submerge all of the dry ingredients in the liquid.
  8. Roughly chop the remaining ½ cup walnuts and scatter them on top along with the remaining ½ cup blueberries and ½ cup apple.
  9. Sprinkle with cinnamon.
  10. Bake for 40-45 minutes, until the top is golden and the oats are set.
  11. Serve warm or at room temperature, topped with milk, Greek yogurt, or maple syrup, if desired.
