Ingredients:

  • Crust and Crumb:
    • 1/2 cup (113 grams / 0.25 lbs) unsalted butter, melted and cooled to room temperature
    • 1/2 cup (100 grams / 0.22 lbs) granulated sugar
    • 1 1/2 cups (190 grams / 0.42 lbs) all-purpose flour
    • 1/2 teaspoon (2 grams / 0.004 lbs) baking soda
    • 1/2 teaspoon (2 grams / 0.004 lbs) baking powder
    • 1/4 teaspoon (1.5 grams / 0.003 lbs) salt
  • Cherry Filling:
    • 2 cups (280 grams / 0.62 lbs) fresh cherries, pitted and halved
    • 1 tablespoon (8 grams / 0.018 lbs) cornstarch
    • 1 tablespoon (15 grams / 0.033 lbs) lemon juice
    • 1 teaspoon (4 grams / 0.008 lbs) granulated sugar

Directions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper and butter the sides and bottom.
  2. Prepare Cherry Filling: In a medium bowl, combine the pitted and halved cherries, cornstarch, and lemon juice. Stir until the cherries are well-coated.
  3. Make Crust and Crumb: In a large mixing bowl, mix the melted butter and 1/2 cup of sugar until combined. Add the flour, baking soda, baking powder, and salt. Stir with a fork until the mixture forms crumbs.
  4. Assemble: Reserve 3/4 cup of the crumb mixture. Press the remaining crumb mixture into the bottom of the prepared pan to form the crust. Spread the cherry filling evenly over the crust. Sprinkle the reserved crumb mixture over the cherries, and then sprinkle with 1 teaspoon of sugar.
  5. Bake: Bake the bars in the preheated oven for 23 to 25 minutes, or until the top is golden brown.
  6. Cool and Serve: Allow the bars to cool completely before cutting into squares. Enjoy!
