  • 360 grams (¾ lbs) thin-cut sirloin steaks, thinly sliced
  • 1 small egg
  • 4 tablespoons cornflour (cornstarch)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon white pepper
  • 4 ½ tablespoons sunflower oil, divided
  • 1 medium onion, thinly sliced
  • 1 red chili, finely sliced (seeds removed for less heat)
  • 1 teaspoon minced ginger
  • 3 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 3 tablespoons dark soy sauce
  • 2 tablespoons tomato puree
  • 6 tablespoons caster sugar (or superfine sugar)
  • 2 tablespoons tomato ketchup
  • 2 tablespoons sweet chili sauce

Directions:

  1. In a bowl, mix together the thinly sliced steak, egg, cornflour, salt, black pepper, and white pepper until well coated.
  2. Heat 3 tablespoons of sunflower oil in a large frying pan or wok over high heat. Fry the coated steak in batches until dark brown and crispy. Remove from the pan and set aside.
  3. Add the remaining 1 ½ tablespoons of oil to the pan and reduce the heat to medium. Cook the sliced onion for 2 minutes until slightly softened.
