  • 1 cup parmigiano reggiano (parmesan), grated (about 100g)
  • 1 tablespoon oil (15ml)
  • 1 1/2 pounds small (1 to 1.5 inch diameter) potatoes, cut in half (680g)
  • Salt and pepper to taste

Directions:

  1. Brush the oil on the bottom of a baking dish and sprinkle on the grated parmigiano reggiano.
  2. Toss the halved potatoes in the oil, season with salt and pepper, and press them cut side down into the parmesan.
  3. Roast in a preheated 400°F (200°C) oven until the parmesan is golden brown, and the potatoes are tender, approximately 20-25 minutes.
