  • 1/3 cup chicken broth (80 ml)
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons vinegar
  • 3 tablespoons sweet chili sauce
  • 1 1/2 tablespoons granulated sugar
  • 1 tablespoon cornstarch

Directions:

  1. In a sizable saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 10 minutes or until water is absorbed. Let it stand covered for an additional 10 minutes.
  2. Meanwhile, in another saucepan, bring an inch of water to a boil. Steam shrimp and broccoli in a steamer for 5-8 minutes or until shrimp is pink and curled. Remove and cool.
  3. In a third saucepan, bring chicken broth, soy sauce, vinegar, sweet chili sauce, sugar, and cornstarch to a boil. Allow it to thicken for 3-5 minutes.
  4. To serve, distribute rice between two plates. Toss shrimp and broccoli in the sauce, then spoon the mixture on top of the rice.
