  • 1/2 teaspoon dried oregano (1 g)
  • Kosher salt and fresh ground black pepper to taste
  • 2 cups cooked shredded chicken breasts (300 g / 0.66 lb)
  • 2 cups cooked brown rice (370 g / 0.8 lb)
  • 1 (227 g / 8 oz) can diced green chiles
  • 1 (396 g / 14 oz) can fire-roasted tomatoes, drained
  • 1/2 cup frozen corn, defrosted (70 g / 0.15 lb)
  • 3/4 cup green enchilada sauce (180 g / 0.4 lb)
  • 1/2 cup plain Greek yogurt, 2% or full fat (125 g / 0.27 lb)
  • 3/4 cup shredded cheddar cheese, divided (85 g / 0.19 lb)

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the sliced green onions along with chili powder, cumin, garlic powder, oregano, salt, and pepper. Sauté for about 2 minutes, until the onions are fragrant and slightly softened.
  3. Stir in the shredded chicken, cooked brown rice, diced green chiles, fire-roasted tomatoes, corn, enchilada sauce, and 1/4 cup (30 g) of the shredded cheddar cheese. Mix everything well, ensuring the ingredients are evenly combined.
  4. Cook the mixture, stirring occasionally, until the cheese is melted and everything is heated through, about 3-5 minutes. Taste and adjust seasoning with salt and pepper if needed.
  5. Remove the skillet from the heat and quickly stir in the Greek yogurt, mixing until the sauce becomes creamy.
  6. Sprinkle the remaining shredded cheddar cheese (about 55 g) over the top of the casserole. Transfer the skillet to the oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
  7. Once baked, remove from the oven and allow the casserole to cool slightly before serving. For added freshness, top with diced tomatoes and chopped cilantro if desired.
