- 2 tablespoons (30 ml / 1 fl oz) olive oil
- 1 teaspoon (5 grams / 0.18 oz) garlic powder
- 1 teaspoon (5 grams / 0.18 oz) Italian seasoning (or ½ teaspoon dried oregano, ¼ teaspoon dried basil, and ¼ teaspoon dried thyme)
- 4 slices (about 120 grams / 4.2 oz) mozzarella cheese
- ½ cup (120 grams / 4.2 oz) basil pesto
- ½ cup (90 grams / 3.2 oz) cherry tomatoes, halved
- 1 tablespoon (15 ml / 0.51 fl oz) fresh lemon juice
- ½ cup (15 grams / 0.53 oz) packed basil leaves, very thinly sliced
- Freshly cracked black pepper to taste
Directions:
- In a large bowl, combine the chicken breasts, salt, pepper, olive oil, garlic powder, and Italian seasoning. Toss to coat the chicken evenly.
