Ingredients:

  • 1 teaspoon (5 grams / 0.18 oz) garlic powder
  • 1 teaspoon (5 grams / 0.18 oz) Italian seasoning (or ½ teaspoon dried oregano, ¼ teaspoon dried basil, and ¼ teaspoon dried thyme)
  • 4 slices (about 120 grams / 4.2 oz) mozzarella cheese
  • ½ cup (120 grams / 4.2 oz) basil pesto
  • ½ cup (90 grams / 3.2 oz) cherry tomatoes, halved
  • 1 tablespoon (15 ml / 0.51 fl oz) fresh lemon juice
  • ½ cup (15 grams / 0.53 oz) packed basil leaves, very thinly sliced
  • Freshly cracked black pepper to taste

Directions:

  1. In a large bowl, combine the chicken breasts, salt, pepper, olive oil, garlic powder, and Italian seasoning. Toss to coat the chicken evenly.
  2. Preheat your grill to medium-high heat. Grill the chicken for about 6-8 minutes on each side, or until fully cooked through.
