The honey and butter enhance the natural sweetness of the corn, while the cream cheese adds a savory richness.

Ingredients:

  • 2 tbsp salted butter (28 g)
  • 2 tbsp honey (30 ml)
  • 1 bag (16 oz / 450 g) frozen corn
  • 2 oz cream cheese, cut into chunks (57 g)
  • ¼ tsp salt
  • ¼ tsp black pepper

Directions:

  1. Melt Butter and Honey: In a large skillet over medium-high heat, melt the butter and honey together, stirring until fully combined.
  2. Cook the Corn: Add the frozen corn to the skillet. Cook for 5-8 minutes, stirring occasionally, until the corn is heated through and starts to caramelize slightly.
  3. Add Cream Cheese: Add the cream cheese chunks to the skillet, along with the salt and black pepper. Stir continuously for 3-5 minutes, until the cream cheese is melted and evenly coats the corn.
  4. Serve: Serve immediately, garnished with extra black pepper if desired. Enjoy this sweet and savory side dish hot.

Notes:

  • Fresh or Canned Corn: You can substitute fresh or canned corn for frozen if you prefer. Adjust cooking time as needed to ensure the corn is heated through.
  • Spicy Twist: Add a pinch of red pepper flakes or a diced jalapeño for a spicy kick.
  • Herbs: Garnish with fresh chopped parsley or chives for an added burst of flavor and color.
  • Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or in the microwave before serving.
