Ingredients:

  • Peach Filling:
    • 1.8 kg (4 lbs) fresh peaches, peeled, cored, and sliced thick
    • 1 1/2 tablespoons fresh lemon juice
    • 100 grams (1/2 cup) granulated sugar
    • 1 tablespoon cornstarch
    • 3/4 teaspoon ground cinnamon, divided
    • 1/8 teaspoon ground nutmeg
  • Topping:
    • 200 grams (1 1/2 cups) cake flour or all-purpose flour* (scoop and level to measure)
    • 150 grams (3/4 cup) granulated sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 143 grams (10 tablespoons) unsalted butter, cold and diced into small cubes
    • 235 ml (1 cup) buttermilk
    • 1 teaspoon vanilla extract
    • 8 grams (2 teaspoons) granulated sugar, for sprinkling over top

Instructions:

  1. Preheat your oven to 375°F (190°C). Butter a 13 by 9 by 2 3/4-inch baking dish, then pour the sliced peaches into the baking dish and toss them with lemon juice.
  2. In a small mixing bowl, whisk together 1/2 cup sugar, cornstarch, 1/2 teaspoon cinnamon, and nutmeg. Sprinkle this sugar mixture evenly over the peaches, then toss to coat them evenly. Set aside.
  3. For the topping, if using cake flour, sift it into a large mixing bowl. If using all-purpose flour, add it directly to the bowl (no sifting necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt, then whisk to combine.
  4. Cut the cold butter into the flour mixture using a fork or pastry cutter until it resembles coarse meal. Make a well in the center of the mixture.
  5. In a separate bowl, mix the vanilla extract with the buttermilk, then pour this mixture into the well in the flour mixture. Fold and stir with a spoon just until combined (avoid over-mixing; the batter should be lumpy).
  6. Dollop spoonfuls of the batter evenly over the top of the peaches (about 12 dollops across the top).
  7. Whisk together the remaining 2 teaspoons of sugar with 1/4 teaspoon of cinnamon, then sprinkle this mixture evenly over the top of the batter.
  8. Bake the cobbler in the preheated oven until the topping is golden brown and set, and the filling is bubbling, about 40 to 45 minutes.
  9. Remove the cobbler from the oven and let it cool for several minutes before serving. Serve warm, with a scoop of vanilla ice cream if desired.

  • For the best results, use firm but ripe peaches for the filling.
  • Feel free to adjust the amount of sugar in the filling according to the sweetness of your peaches and your personal preference.
