Ingredients:
For the Cake:
- 180 grams (1 1/2 cups) all-purpose flour
- 10 grams (2 teaspoons) baking powder
- 2 grams (1/2 teaspoon) baking soda
- 2 grams (1/2 teaspoon) salt
- 80 milliliters (1/3 cup) coconut oil, at room temperature or oil of choice
- 80 grams (1/3 cup) natural unsweetened peanut butter
- 200 grams (1 cup) brown sugar
- 2 large eggs
- 240 milliliters (1 cup) buttermilk
- 5 milliliters (1 teaspoon) vanilla extract
For the Frosting:
- 240 grams (1 cup) natural unsweetened peanut butter
- 113 grams (1/2 cup) unsalted butter, softened
- 360 grams (3 cups) powdered (confectioner’s) sugar
- up to 120 milliliters (1/2 cup) heavy cream, at room temperature
Instructions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the peanut butter, coconut oil, and brown sugar until creamy. Add the eggs and vanilla extract, and beat until combined.
- Alternately add the flour mixture and buttermilk to the wet mixture, beating just until combined. Be careful not to overmix.
- Grease a 9×3 inch round baking pan and pour the batter into it.
- Bake for about 30 minutes or until a toothpick inserted into the middle of the cake comes out moist. Let the cake cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
