Ingredients

  • 227 grams (1 cup) unsalted butter, softened
  • 135 grams (⅔ cup) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 280 grams (2¼ cups) all-purpose flour
  • 120 grams (½ cup) jam or preserves (strawberry, blueberry, apricot, etc.)

Directions

  1. Preparation:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats and set aside.
  2. Cream Butter and Sugar:
    • In a stand mixer fitted with the paddle attachment, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 1-2 minutes.
  3. Add Egg Yolk and Vanilla:
    • Add in the egg yolk and vanilla extract, mixing until fully incorporated. Scrape down the sides of the bowl as needed.
  4. Combine Dry Ingredients:
    • Add the salt and all-purpose flour to the mixture. Mix until the dough is completely combined, making sure all the flour and butter are fully incorporated. The dough may appear dry and crumbly, but this is normal.
  5. Form Cookies:
    • Form the dough into 1-tablespoon-sized balls and place them onto the prepared baking sheets. Using your thumb or the back of a ½ teaspoon measure, press indentations into the center of each cookie.
  6. Fill with Jam:
    • Fill each indentation with about ½ teaspoon of your favorite jam or preserves. We used strawberry, blueberry, and apricot jams.
  7. Bake:
    • Place the cookies in the preheated oven and bake for 8-10 minutes, or until the cookies are set and slightly golden brown around the edges.
  8. Cool and Enjoy:
    • Allow the cookies to cool completely on the baking sheets before transferring them to a wire rack. Enjoy your delicious thumbprint cookies!
