Ingredients

  • 450g (1 lb) tilapia fillets
  • 45g (3 tbsp) butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 170g (6 oz) roasted peppers, chopped (see note)
  • 170g (6 oz) roasted peppers, pureed (see note)
  • 180ml (¾ cup) heavy cream
  • 50g (½ cup) grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Directions

  1. In a large, non-stick skillet, melt 30g (2 tbsp) of butter over medium heat. Add the tilapia fillets and cook for 3-4 minutes on each side until fully cooked. Season the fish with salt and pepper, then remove from the skillet and set aside.
  2. In the same skillet, add the remaining 15g (1 tbsp) of butter and diced onion. Sauté for about 5 minutes until the onion becomes translucent.
  3. Add the minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the heavy cream and add the grated Parmesan cheese. Stir well and taste the sauce, adjusting the salt as needed.
  5. Return the tilapia fillets to the skillet, spooning the sauce over the fish to coat it thoroughly.
  6. Garnish with chopped parsley and additional grated Parmesan cheese before serving.

Notes

  • Roasted Peppers: You can use store-bought roasted peppers or roast your own at home. To roast peppers, place them under a broiler until the skin is charred, then peel and remove the seeds.
  • Substitutions: For a lighter version, you can substitute half-and-half for the heavy cream. If you don’t have Parmesan cheese, Pecorino Romano works well too.
