  • 1 cup (240ml) milk

  • 1/2 cup (100g) sugar + 2 tablespoons (25g), divided
  • 1 tablespoon (15ml) vanilla extract
  • Zest of 1/2 lemon
  • 2/3 cup (80g) all-purpose flour
  • 1/8 teaspoon (0.6g) salt
  • 16 ounces (450g) mixed berries (raspberries, blueberries, blackberries)
  • Powdered sugar, for topping

Directions:

  1. Preheat the oven to 350°F (175°C). Place a tart or pie dish in the oven with 1/2 tablespoon of butter. Allow the pan to heat in the oven until the butter is melted and evenly coats the pan.
  2. In a blender or bowl using an immersion blender, combine the milk, eggs, 1/2 cup of sugar, vanilla extract, and lemon zest. Blend until smooth. Add the flour and salt, and blend for about 1 minute until slightly foamy.
