  • 120 grams (½ cup plus 4 teaspoons) caster sugar, divided
  • 113 grams (4 ounces) cream cheese, cut into cubes, room temperature
  • 30 grams (¼ cup) all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 eggs, room temperature
  • 120 milliliters (½ cup) whole milk
  • 1 tablespoon confectioners’ sugar, used as a garnish if desired
  • Zest of one lemon

Instructions:

  1. Preheat Oven and Prepare Dishes: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly butter 4 oven-proof dessert dishes and sprinkle the sides and bottom with 4 teaspoons of caster sugar. Place ½ cup of blueberries into each dessert dish and set aside.
  2. Prepare Batter: In the bowl of an electric stand mixer, beat the cream cheese, the remaining ½ cup of caster sugar, flour, vanilla extract, and 1 egg until well blended. Add the remaining 2 eggs and mix until well blended. Gradually beat in the whole milk until the batter is smooth and creamy.
  3. Assemble and Bake: Pour the batter into the dessert cups, filling them to about an inch from the top. Top each cup with grated lemon zest. Place the dessert dishes on a baking sheet and transfer to the preheated oven. Bake for 20 minutes or until the clafoutis is golden brown on top and set.
