Ingredients
Keto Eggplant Pizza:
- 1 large eggplant (about 1 pound or 450 g)
- 1 cup (240 ml) keto pizza sauce or your favorite pizza sauce
- 2 cups (200 g) mozzarella cheese, shredded
- Toppings:
- ¼ cup (35 g) black olives, sliced
- ¼ cup (30 g) red onions, chopped
- Italian seasoning, to taste
Directions
- Prepare the Oven: Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Prepare the Eggplant: Slice the eggplant into ½-inch (1.3 cm) thick rounds. To sweat the eggplant, you can either:
- With Salt: Place the slices on the parchment-lined baking sheet and sprinkle with salt. Let them sit for 10-12 minutes, then dab off the moisture with a paper towel. Repeat on the other side.
- In the Microwave: Place the slices on a paper towel-lined plate and microwave on high for 5 minutes. You may need to do this in batches.
- Top and Bake: Arrange the eggplant slices on the baking sheet. Spread 1 cup of pizza sauce evenly over the slices. Sprinkle with 2 cups of shredded mozzarella cheese, then add your desired toppings (black olives and red onions). Sprinkle with Italian seasoning to taste. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and golden brown around the edges.
- Serve: Remove from the oven and serve the eggplant pizzas warm. Enjoy!
Notes
- Substitutions: Feel free to use your favorite low-carb pizza sauce or make your own.
- Topping Ideas: Customize with your favorite toppings like pepperoni, bell peppers, mushrooms, or spinach.
- Cooking Tips: Sweating the eggplant helps reduce moisture, ensuring a firmer base for your pizza.
