Directions

  1. Prepare the Oven: Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Prepare the Eggplant: Slice the eggplant into ½-inch (1.3 cm) thick rounds. To sweat the eggplant, you can either:
    • With Salt: Place the slices on the parchment-lined baking sheet and sprinkle with salt. Let them sit for 10-12 minutes, then dab off the moisture with a paper towel. Repeat on the other side.
    • In the Microwave: Place the slices on a paper towel-lined plate and microwave on high for 5 minutes. You may need to do this in batches.
