Ingredients:
- 1-pound (450g) sockeye salmon fillet, cut into 4 (1/4-lb or 113g) fillets
- 1/2 cup (60g) sun-dried tomatoes, drained
- 3 cups (90g) baby spinach
- 1/2 cup (75g) feta cheese crumbles
- Sea salt to taste
Optional Add-Ins:
- 1 cup (40g) fresh basil
- 2 teaspoons (4g) Italian seasoning
Directions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roughly chop the sun-dried tomatoes. In a small saucepan, heat the sun-dried tomatoes over medium heat. Once sizzling, add the baby spinach and cook until wilted. Remove the pan from the heat and stir in the feta cheese and sea salt. Set aside.
- Place the salmon fillets on a cutting board. Carefully slice each fillet in half horizontally, leaving about 1/4” to 1/2” (0.6 to 1.3cm) still attached.
- Brush the salmon fillets with avocado oil (or your preferred cooking oil) and sprinkle with sea salt.
- Transfer the salmon fillets to the parchment-lined baking sheet. Stuff each fillet with the prepared filling mixture.
- Bake on the center rack of the preheated oven for 25 to 30 minutes, or until the salmon is cooked through and flakes easily with a fork.
