Ingredients:

  • 900g (2 lbs) chicken thighs (4 thighs), bone in, skin on
  • 60g (4 tbsp) butter, softened
  • 120ml (1/2 cup) white miso paste
  • 5g (1 tsp) ginger paste
  • 15ml (1 tbsp) rice vinegar
  • 6 garlic cloves, smashed
  • 1/4 tsp black pepper
  • 30ml (2 tbsp) honey

Directions:

  1. Preheat the oven to 200°C (400°F) and place a cast iron skillet inside to heat up for 20 minutes.
  2. In a bowl, combine softened butter, white miso paste, ginger paste, rice vinegar, smashed garlic cloves, black pepper, and honey to make a paste.
  3. Add the chicken thighs to the bowl and massage the paste all over the chicken, ensuring it gets under the skin without tearing.
  4. Place the chicken in the heated cast iron skillet and roast for 30 minutes, or until the internal temperature reaches 74°C (165°F).
  5. If the skin is not as crispy as desired, place it under the broiler for a couple of minutes to crisp it up.
