Ingredients:

  • 30 milliliters (2 tablespoons) extra virgin olive oil
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 parsnips, chopped (or substitute sweet potatoes)
  • 3 stalks celery, finely chopped
  • 6 cloves garlic, minced (about 3 tablespoons)
  • 30 grams (2 tablespoons) fresh ginger, minced
  • 5 grams (1 teaspoon) dried turmeric
  • 150 grams (3/4 cup) red lentils
  • 30 grams (2 tablespoons) fresh parsley, chopped
  • 2.5 milliliters (1/2 teaspoon) sea salt, more to taste
  • 960 milliliters (4 cups) vegetable broth + 480 milliliters (2 cups) water
  • 120 grams (2 cups) kale or spinach, finely chopped
  • 1 small lemon, juiced

Instructions:

  1. In a large pot or Dutch oven, warm the olive oil over medium heat. Once hot, add the diced onion and sauté for 3 minutes until translucent.
  2. Add the chopped carrots, parsnips (or sweet potatoes), and celery to the pot. Sauté for an additional 5 minutes until the vegetables begin to soften.
  3. Stir in the minced garlic, ginger, and dried turmeric, and sauté for 1 minute until fragrant.
  4. Pour in the vegetable broth, water, red lentils, sea salt, and black pepper. Stir to combine, then bring the mixture to a boil.
  5. Reduce the heat to low and simmer the soup, covered, for 15 minutes until the lentils are tender and the vegetables are cooked through.
  6. Remove the pot from the heat. Stir in the chopped kale (or spinach), fresh parsley, and lemon juice. Cover and let the greens steam for a few minutes until wilted.
