Ingredients
- 2 eggs, hard-boiled
- 2.5 ml (1/2 teaspoon) olive oil
- 15 ml (1 tablespoon) ginger paste
- 5 ml (1 teaspoon) garlic chili sauce
- 240 ml (1 cup) chicken broth
- 480 ml (2 cups) beef broth
- 1 package Miracle noodles (spaghetti form), drained
- 1 cup (about 70 grams) mushrooms, sliced
- 3 cups (about 90 grams) raw spinach
- 15 ml (1 tablespoon) soy sauce
Directions
- Heat the Oil: In a deep-sided skillet or pot, heat the olive oil over medium heat.
- Saute Aromatics: Add the ginger paste and garlic chili sauce to the pot. Saute for about 30 seconds until fragrant.
- Prepare the Broth: Pour in the chicken broth, beef broth, and soy sauce. Whisk to combine all ingredients well.
- Add Mushrooms and Noodles: Place the sliced mushrooms and drained Miracle noodles into the broth mixture. Lightly boil until the mushrooms are tender.
- Wilt the Spinach: Stir in the raw spinach and cook until it is just wilted.
- Serve: Remove the pot from heat. Spoon the ramen evenly into two bowls. Garnish each bowl with shaved radishes, chopped green onions, and a hard-boiled egg.
