  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 lb (680g) wild cod, cut into chunks
  • 1 can (15 oz / 425g) diced tomatoes
  • 1/2 cup (120ml) coconut milk
  • 1/4 cup (60ml) sour cream (optional)
  • 2 tbsp (30g) tomato paste
  • 1 whole red, green, and yellow bell pepper, thinly sliced
  • 1 pinch of sea salt and ground black pepper
  • 1/2 tsp (2.5g) red pepper flakes
  • 1 tbsp (15g) fresh cilantro, chopped

Directions:

  1. In a large skillet or cast iron, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant, about 3 minutes.
  2. Stir in diced tomatoes, coconut milk, sour cream (if using), and tomato paste. Allow the sauce to simmer for approximately 3 minutes.
  3. Add sliced bell peppers and cod chunks to the skillet. Season with salt, black pepper, and red pepper flakes.
  4. Cover the skillet and let the fish stew simmer for 10-12 minutes, or until the cod is cooked through, gently turning the cod halfway through if it hasn’t fully submerged in the broth.
  5. Once done, garnish the stew with fresh cilantro and serve hot.
