Ingredients:

  • 60 grams (1/4 cup) chopped red onion
  • Juice of 2 limes
  • 5 ml (1 teaspoon) olive oil
  • Pinch of kosher salt, black pepper to taste
  • 450 grams (1 lb) jumbo cooked, peeled shrimp, chopped*
  • 1 medium tomato, diced

  • 15 ml (1 tablespoon) chopped cilantro

Directions:

  1. In a small bowl, mix together the red onion, lime juice, olive oil, salt, and pepper. Allow them to marinate for at least 5 minutes to soften the flavor of the onion.

  3. Pour the lime dressing over the shrimp and avocado mixture. Add chopped cilantro and gently toss everything together until well combined.
  4. Adjust salt and pepper according to taste preferences.
  5. Serve immediately and enjoy the refreshing flavors!

Notes:

  • If you prefer a spicier kick, you can leave some or all of the jalapeño seeds in.
  • This salad is best enjoyed fresh but can be stored in the refrigerator for up to a day. However, the avocado may brown slightly over time.
  • Feel free to customize the salad by adding additional ingredients such as diced cucumber or bell peppers.
