Ingredients:

Broccoli Mixture:

  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt

Topping:

  • 1 1/2 cups Ritz and/or Keebler Club cracker crumbs (approximately 1 “sleeve” of crackers; I use a combination of 3/4 cup Ritz + 3/4 cup Keebler Club)
  • 1/4 cup butter, melted

Measurements:

  • Broccoli florets: 400 grams / 0.88 lb
  • Mild or medium cheddar cheese: 113 grams / 0.25 lb
  • Cream of mushroom soup: 305 grams / 10.75 oz
  • Mayonnaise: 60 grams / 0.13 lb
  • Milk: 60 grams / 0.13 lb
  • Egg: 50 grams / 0.11 lb
  • Salt: 0.7 grams / 0.0015 lb
  • Ritz and/or Keebler Club cracker crumbs: 160 grams / 0.35 lb
  • Butter: 57 grams / 0.13 lb

Directions:

  1. Gently thaw broccoli and warm it in the microwave for about 5 minutes; ensure thorough draining. Cut any larger florets into bite-sized pieces.
  2. In a mixing bowl, blend broccoli, 1/2 cup shredded cheddar, cream of mushroom soup, mayonnaise, milk, egg, and salt. Spoon the mixture into a greased 8×8-inch or 9×9-inch baking dish. Sprinkle the remaining 1/2 cup shredded cheddar on top.
  3. Combine cracker crumbs and melted butter until moistened. Evenly spread this buttery crumb mixture over the broccoli layer.
  4. Bake at 350℉ for 45 – 50 minutes until the casserole is bubbly, and the crumb topping achieves a light golden brown. Delight in the symphony of textures and flavors as you savor each spoonful.
