  • 680 grams (4 cups) frozen cauliflower rice
  • 240 grams (1 cup) canned black beans
  • 340 grams (2 cups) Roasted Cilantro Lime Corn
  • 340 grams (2 cups) cherry tomatoes, cut in half
  • 120 milliliters (1/2 cup) Creamy Cilantro Lime Sauce

Directions:

  1. In a medium bowl, combine shrimp, lime juice, chili powder, garlic powder, black pepper, salt, and oregano. Toss until the shrimp are thoroughly coated.
  2. Heat a medium frying pan over medium-high heat and spray with cooking spray. Add the seasoned shrimp and cook until pink, approximately 3 minutes.
  3. Microwave the frozen cauliflower rice according to package instructions. Drain the black beans and microwave for 1 minute. Set aside.
