Ingredients:
- 1 pound (454 grams) large shrimp, peeled and deveined
- 1 pound (454 grams) cod fillets, skinless, cut into 1 1/2 inch pieces
- 3 garlic cloves, minced
- Salt and pepper, to taste
- 1 onion, coarsely chopped
- 1 (14.5 ounce) can of whole tomatoes
- 3/4 cup (15 grams) chopped fresh cilantro, divided
- 2 tablespoons (30 ml) olive oil
- 1 red bell pepper, stemmed, seeded, and cut into 1/2 inch squares
- 1 green bell pepper, stemmed, seeded, and cut into 1/2 inch squares
- 1 (14 ounce) can regular or light coconut milk (not sweetened)
- 2 tablespoons (30 ml) lime juice
- 2 tablespoons (30 ml) hot sauce, such as Nando’s, plus more for serving
- Cooked long grain white rice
Directions:
- In a bowl, toss the shrimp with minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Set aside.
- In a food processor, blend together the onion, whole tomatoes (including their juices), and 1/4 cup of cilantro until smooth.
- In a large Dutch oven, heat olive oil over medium heat. Add the bell peppers and 1/2 teaspoon of salt. Cook for 5 to 7 minutes, until softened.
- Add the blended mixture from the food processor to the Dutch oven, along with another 1/2 teaspoon of salt. Cook for 3 to 5 minutes, until the mixture thickens slightly.
- Increase the heat to medium-high and pour in the coconut milk. Bring the mixture to a boil.
- Add the shrimp, cod, and lime juice to the pot, ensuring the fish is submerged in the liquid. Cover the pot and turn off the heat. Allow the stew to stand for 15 to 20 minutes, until the fish is cooked through and opaque.
- Stir in 2 tablespoons of hot sauce and the remaining cilantro. Season with salt and pepper to taste.
- Serve the Moqueca over cooked white rice, with additional hot sauce on the side for those who crave extra heat.
