Ingredients:
- 30 milliliters (2 tablespoons) olive oil
- 1 cup diced onion
- 1 cup diced green bell pepper
- 1 tablespoon minced fresh garlic
- 454 grams (1 pound) ground beef, 80/20
- 1/2 teaspoon dry mustard
- 2 teaspoons chili powder
- 2 teaspoons kosher salt
- 1/4 teaspoon freshly ground black pepper
- 120 grams (1/2 cup) uncooked long grain white rice
- 30 milliliters (2 tablespoons) tomato paste
- 1 411-gram (14.5-ounce) can diced tomatoes with juice
- 240 milliliters (1 cup) water
- 5 milliliters (1 teaspoon) Worcestershire sauce
- 120 grams (1 cup) shredded cheddar cheese, optional (not shown in the photo)
Directions:
- In a skillet with a tight-fitting cover, heat olive oil over medium-high heat.
- Add diced onion, green bell pepper, minced garlic, ground beef, dry mustard, chili powder, salt, and pepper. Sauté until the ground beef is no longer pink, breaking it up as you cook. Drain any excess grease.
- Add uncooked rice and cook for two minutes, allowing the rice to absorb the liquid.
- Stir in tomato paste and cook for one minute.
- Add canned tomatoes with juice, water, and Worcestershire sauce. Stir to combine, then cover and simmer for 20 minutes.
- After 20 minutes, remove the lid and fluff the mixture with a fork. If the mixture is too wet, cook for another few minutes with the lid off.
- If using cheese, sprinkle it on top during the last few minutes of cooking time with the lid on.
- Serve hot and enjoy!
