This Crustless Sausage, Kale, and Ricotta Quiche has become a beloved staple in our household. It all started when I was searching for a nutritious yet delicious breakfast option that would satisfy both my family’s taste buds and their nutritional needs. From the moment we tried this quiche, we were hooked. The savory flavors of the Italian sausage paired perfectly with the earthy kale and creamy ricotta cheese, creating a harmonious blend of flavors and textures. Ingredients:

  • 5 eggs
  • 3 egg whites
  • 240 milliliters (1 cup) low-fat milk, or milk of choice
  • 15 milliliters (1 tablespoon) chopped fresh basil
  • 5 milliliters (1 teaspoon) Italian seasoning
  • Kosher salt and fresh ground black pepper, to taste
  • 55 grams (1/2 cup) grated pecorino cheese (Parmesan may also be used)
  • 115 grams (1/2 cup) part-skim ricotta cheese
  • 225 grams (1/2 pound) Italian chicken or turkey sausage
  • 10 milliliters (2 teaspoons) olive oil
  • 3 cups chopped kale
  • 1 shallot, minced
  • 2 cloves of garlic, grated or minced

Instructions:

  1. Preheat the oven to 350°F (175°C) and spray a casserole dish with cooking spray.
  2. In a large skillet, cook the sausage over medium heat, breaking it apart with a wooden spoon as it cooks. Transfer the cooked sausage to the prepared casserole dish.
  3. In the same skillet, add olive oil and sauté the minced shallot for 2 minutes. Add the chopped kale, garlic, salt, and pepper. Sauté for an additional 2-3 minutes, or until the kale has wilted. Transfer the kale mixture to the casserole dish.
  4. In a large bowl, whisk together the eggs, egg whites, milk, basil, Italian seasoning, salt, pepper, and 1/4 cup of pecorino cheese. Pour the mixture into the casserole dish and stir to combine. Dot the ricotta cheese throughout the quiche and sprinkle the remaining 1/4 cup of pecorino cheese on top.
  5. Bake for 45-60 minutes, or until the center is set. Garnish with extra basil, if desired, before serving.
