  • 3 garlic cloves, minced
  • 2 (15-ounce) cans white beans, like great northern, butter beans, or cannellini, rinsed and drained (850 g)
  • 1 ½ cups chicken stock (355 ml)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1 tsp minced fresh thyme leaves
  • 1/2 bunch curly kale, stems removed, leaves torn into bite-size pieces, about 3 cups packed (150 g)
  • 1 Tbsp lemon juice
  • 1/2 cup parmesan, plus extra for serving (50 g)
  • Red pepper flakes, optional

Directions:

  1. Heat olive oil in a 12-inch skillet over medium-high heat.
  2. Cook sliced sausage on both sides until browned, about 4-5 minutes. Set aside.
  3. Add minced garlic to the pan and cook until fragrant, about 15 seconds.
  4. Add ⅔ of the beans and 1 cup of chicken stock to the skillet. Season with salt, pepper, and thyme. Stir and bring to a simmer.
  5. In a medium bowl, mash remaining beans with a fork until a thick paste forms. Add to the skillet and stir to combine. Simmer for 2-3 minutes.
  6. Add kale, reduce heat to medium-low, and cook until the sauce becomes creamy, slightly reduced, and kale has wilted, about 2 minutes more.
  7. Add parmesan, lemon juice, and cooked sausage. Stir to combine. Adjust seasoning to taste.
  8. Serve with extra parmesan cheese and, if desired, red pepper flakes, alongside some crusty bread.
