Ingredients:

  • 1½ pounds Chicken Breast, boneless and skinless, pounded to ¼ inch thick (680g)
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Paprika
  • ¼ teaspoon Fresh Ground Pepper or to taste
  • 2 tablespoons Olive Oil
  • 8 ounces Mushrooms, sliced (not too thin) (227g)
  • 2 tablespoons Butter
  • 2 tablespoons All-Purpose Flour
  • 2 cups Chicken Broth (475ml)

Directions:

  1. In a small bowl, combine salt, garlic powder, onion powder, paprika, and black pepper.
  2. Cut each chicken breast in half lengthwise and pound each piece to about ¼ inch thick. Season both sides with the spice mix.
  3. Heat olive oil in a large skillet over medium heat. Cook chicken 3-5 minutes on each side until golden brown and cooked through. Ensure the internal temperature reaches at least 165°F (74°C). Set chicken aside and keep warm.
  4. In the same skillet, add butter. When melted and foaming, add mushrooms and cook for 1-2 minutes, stirring frequently.
  5. Sprinkle flour over the mushrooms, stirring well to mix. Cook for an additional 2 minutes, stirring frequently.
  6. Slowly add chicken broth to the mushroom mixture, stirring and scraping any bits off the bottom of the skillet. Bring to a simmer and cook for approximately 5 minutes or until the sauce thickens, stirring occasionally.
  7. Add the chicken back to the skillet, turning to coat with the mushroom sauce. Lower the heat to medium-low, cover, and cook for about 5 minutes to warm through.
