Ingredients:

  • 1 round loaf of rustic bread (bread boule)
  • 1 wheel of brie cheese, approximately 340g (12 ounces), top rind removed (triple cream brie recommended)
  • 120ml (1/2 cup) whole berry cranberry sauce
  • 2 tablespoons fresh thyme leaves
  • 30ml (2 tablespoons) olive oil
  • Kosher salt
  • Freshly ground pepper

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Slice off the top quarter of the bread loaf to create a lid. Use the brie wheel as a guide to trace a circle in the middle of the bread. Use a knife to cut around the circle, then scoop out the middle of the bread.
  3. Cut slices around the edge of the bread about 1.5 inches apart, cutting about 3/4 of the way down but not all the way through, creating pull-apart pieces.
  4. Brush the inside of the bread with olive oil and season with salt and pepper. Sprinkle half of the fresh thyme leaves over the bread.
  5. Place the brie wheel in the hollowed-out center of the bread. Sprinkle the remaining thyme leaves over the top of the brie. Spoon the cranberry sauce over the brie.
  6. Replace the top of the bread loaf and place it on a baking sheet lined with foil or parchment paper to catch any melted cheese.
  7. Bake for approximately 20 minutes, until the bread is golden brown and the cheese is melted and bubbly.
  8. Optional: Toast the extra bread that was scooped out of the middle for serving.
