Ingredients:

  • 1 French baguette
  • 2 yellow onions
  • 227 grams (8 oz) sliced Swiss cheese
  • 454 grams (1 lb) roast beef or beef tenderloin
  • 113 grams (4 oz) horseradish aioli*
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • Basil, for garnish

Instructions:

  1. Heat 2 tablespoons of olive oil in a sauté pan over medium-low heat. Add the sliced onions and cook low and slow for 30-40 minutes until the onions are caramelized, stirring occasionally.
  2. While the onions are caramelizing, preheat your oven to 400°F (200°C). Slice the baguette into twenty-four 1/2-inch wide slices and lay them flat on an oiled cookie sheet. Brush the top of each crostini with olive oil and sprinkle with salt and pepper. Bake for 5 minutes until lightly toasted.
  3. Remove the crostini from the oven. Slice the Swiss cheese into pieces that just cover each crostini. Top each crostini with sliced beef and Swiss cheese. Return the crostini to the oven for another 5 minutes or until the cheese has melted.
  4. Top each crostini with a pinch of caramelized onions, a drizzle of horseradish aioli, and a sprinkle of julienned basil.
