Ingredients:

  • 2/3 cup shredded carrots
  • 1 garlic clove, minced
  • 1 cup green onion, sliced
  • 1 large red bell pepper, seeded and diced
  • 1 8oz. can sliced water chestnuts, drained and chopped
  • 2/3 cup cashews or peanuts, roughly chopped
  • 1 cup Kinder’s Teriyaki Marinade & Sauce, divided
  • Romaine, iceberg, or butter leaves
  • 2 tbsp. sesame seeds for garnish

  • Chicken breasts: 680 grams / 1.5 lbs
  • Sesame oil: 30 ml / 2 tbsp
  • Shredded carrots: 85 grams / 0.19 lb
  • Garlic clove: 3 grams / 0.0066 lb
  • Green onion: 120 grams / 0.26 lb
  • Red bell pepper: 150 grams / 0.33 lb
  • Water chestnuts: 227 grams / 8 oz
  • Cashews or peanuts: 85 grams / 0.19 lb
  • Kinder’s Teriyaki Marinade & Sauce: 240 ml / 1 cup
  • Sesame seeds: 12 grams / 2 tbsp

Directions:

  1. In a large skillet, heat 15 ml (1 tbsp) sesame oil over medium-high heat.
  2. Add diced chicken and cook for 3-5 minutes until fully cooked. Remove to a plate.
  3. In the same skillet, heat the remaining 15 ml (1 tbsp) sesame oil. Add minced garlic and 2/3 cup of sliced green onions, sauté for 30 seconds.
  4. Add diced bell pepper and chopped water chestnuts, cook for an additional 2 minutes.
  5. Stir in 2/3 of the Teriyaki Sauce, reserving the rest for drizzling. Cook for 1 minute, stirring occasionally.
  6. Add back the cooked chicken and shredded carrots, mixing thoroughly until the mixture is heated through.
