Ingredients:

  • 454 grams (1 pound) dried lasagna noodles
  • 538 grams (19 ounces) Old El Paso Red Enchilada Sauce (1 can)
  • 226 grams (8 ounces) cream cheese
  • 1 1/2 cups chopped cooked chicken (great for using up leftovers)
  • 425 grams (15 ounces) black beans, drained (1 can)
  • 1 cup chopped bell pepper (heaping), using two colors
  • 2 cloves garlic, minced
  • 283 grams (2 1/2 cups) shredded Mexican blend cheese, divided
  • 1/2 cup chopped scallions
  • 1 Old El Paso Taco Seasoning Packet

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit. Coat a 9 x 13 inch baking dish with nonstick cooking spray.
  2. In a blender, combine the Old El Paso Red Enchilada Sauce and cream cheese. Blend until smooth. Pour half of the cheese sauce into the prepared baking dish.
  3. In a large bowl, mix together the chopped chicken, black beans, bell peppers, garlic, 2 cups shredded cheese, scallions, and taco seasoning.
  4. Lay out the cooked lasagna noodles on a clean tea towel. Spread the chicken and bean mixture evenly over 12 lasagna noodles. Roll each noodle, tucking in any bits that fall out, and place them in the baking dish.
  5. Pour the remaining cheese sauce over the top of the roll ups in the baking dish.
  6. Bake for 30-35 minutes, then sprinkle the remaining shredded cheese over the top. Garnish with chopped scallions or cilantro, if desired.
