  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 ½ tbsp harissa paste
  • 1 tbsp tomato puree
  • 200 ml full-fat coconut milk (about 7 fl oz)
  • 150 g cherry tomatoes, sliced in half (about 5.3 oz)
  • 500 g fresh gnocchi (about 17.6 oz)
  • 60 g baby spinach (about 2 packed cups)

To Serve:

  • Chilli flakes
  • Black pepper
  • Freshly chopped parsley

Directions:

  1. Heat sunflower oil in a large frying pan over medium-high heat.
  2. Add diced chorizo and cook for 3-4 minutes until it releases its oils. Use a slotted spoon to remove chorizo and set aside.
  3. Reduce heat to medium, add chopped onion, bell pepper, garlic, salt, and pepper to the pan. Cook for 5 minutes until softened.
  4. In the meantime, bring a large pan of water to boil for the gnocchi.
  5. Add harissa paste and tomato puree to the pan with onions, stir together.
  6. Pour in coconut milk, add cherry tomatoes, and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
  7. Cook gnocchi in boiling water for 2-4 minutes until it floats to the top. Use a slotted spoon to transfer gnocchi to the frying pan with the sauce.
