Ingredients:
- 30ml oil (vegetable/canola)
- 1/2 medium onion, diced (about 1/2-3/4 cup)
- 2 medium jalapeños, diced (seeds removed for milder heat)
- 225g yellow American cheese, sliced and cubed
- 225g Monterey Jack cheese, shredded (or Pepper Jack for extra spice)
- 240-360ml half & half (depending on desired consistency)
- 1-2 tomatoes, seeded and diced
- 80g fresh cilantro, chopped
- Optional: chili powder + cayenne pepper, to taste
Directions:
- In a medium-sized skillet over medium-high heat, add oil, onions, and jalapeños. Sauté for 5-10 minutes or until onions are translucent.
- Reduce heat to low. Add both cheeses. Gradually add half & half, stirring until smooth and reaching the desired consistency.
- Add diced tomatoes and cilantro. Stir and season to taste with chili powder and cayenne, if desired.
- Serve the hot dip right away with your choice of tortilla chips and get ready to elevate your snacking experience.
