Ingredients:

  • 1 lb (450 g) tilapia fillets
  • 3 tbsp butter (42 g)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 oz (170 g) roasted peppers, chopped (see note)
  • 6 oz (170 g) roasted peppers, pureed (see note)
  • ¾ cup (180 ml) heavy cream
  • ½ cup (50 g) grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Directions:

  1. Cook the Fish: Melt 2 tbsp (28 g) of butter in a large, non-stick skillet over medium heat. Season the tilapia fillets with salt and pepper, then add them to the skillet. Fry for 3-4 minutes on each side, until cooked through. Remove the fish from the skillet and set aside.
  2. Prepare the Sauce Base: In the same pan, add the remaining 1 tbsp (14 g) of butter and diced onion. Sauté for 5 minutes, or until the onion is soft and translucent.
  3. Add Garlic and Peppers: Add the minced garlic, chopped roasted peppers, and pureed roasted peppers to the pan. Continue cooking for another 5 minutes, stirring occasionally.
  4. Finish the Sauce: Pour in the heavy cream and add the grated Parmesan cheese. Stir well to combine and heat through. Taste the sauce and add more salt if needed.
  5. Combine and Serve: Return the cooked tilapia to the pan, spooning the sauce over the fish. Garnish with chopped parsley and additional grated Parmesan cheese if desired.
  6. Serve: Serve the tilapia and sauce hot, with your choice of sides such as rice, pasta, or a fresh salad.

Notes:

  • Roasted Peppers: You can use store-bought roasted peppers for convenience, or roast your own. To roast peppers, place them under a broiler or directly over a gas flame until charred all over, then place in a covered bowl to steam. Peel off the skins, remove the seeds, and chop or puree as needed.
  • Substitutions: If you prefer, you can substitute tilapia with other firm white fish such as cod, haddock, or grouper.
